- 2.5 cups cauliflower, cooked
- 2 (400 ml) cans artichoke hearts, chopped (packed in water)
- 900 ml low sodium chicken broth
- 2 cups fat-free cottage cheese
- 1 cups 1% low-fat milk
- 3 tablespoons garlic-flavored olive oil
- 1 tablespoon basil
- 1/2 teaspoon fresh ground black pepper

- Cook beans and cauliflower according to directions.
- Combine all ingredients in food processor, including water from artichoke cans, and puree.
- Pour into crockpot and cook on high for 2-3 hours or low for 4-6 hours.
