Wontons for Wonton Soup

Ingredients:
  • 1/2 pound lean ground pork or veal
  • 1/4 pound medium shrimp - peeled, deveined, and coarsely chopped
  • 5 brown mushrooms
  • 3 green onions, finely chopped
  • 1 egg
  • 2 tablespoons soy sauce
  • 1 teaspoon sherry
  • 1 1/2 teaspoons sea salt
  • 1/2 teaspoon sugar
  • 1 tablespoon oriental 5 spice
  • 1 (14 ounce) packages square wonton wrappers
Directions:
Prep Time: 60 min Total Time: 75 min Yield: 70 wontons
  1. Strain mushroom soaking liquid completely. Pat dry with paper towel, and chop.
  2. Place pork, shrimp, mushrooms, green onion, egg, soy sauce, salt, and dashi (if using) together in a large bowl. Mix thoroughly until all ingredients are completely incorporated.
  3. Have a bowl of luke-warm water available for dipping. If you are right-handed, place wonton wrapper in a triangle position on your left palm. Place a small amount of filling (about a heaping teaspoon or more) near the lower corner of wonton wrapper. Fold that corner over filling toward the opposite corner about half way, making sure the filling is securely enclosed.
  4. Dip finger into a bowl of water and dab left corner of wrapper with water. Fold left and right corners toward you (away from the top corner), resulting in the shape of a nurse's hat.
  5. Place wontons on cookie sheets while you work, keeping them covered with a damp towel to prevent drying out. Wontons may be carefully stored in plastic freezer bags and frozen for future use.
  6. Boil wontons 5 minutes before adding to broth to be heated up as soup.

Tropical Mustard Glazed Lamb Chops


Ingredients:
  • 1/2 cup ginger ale
  • 1/2 cup orange juice or 1 cup pineapple juice
  • 1/4 cup brown sugar
  • 1 tablespoons vegetable oil
  • 1 tablespoon cider vinegar
  • 1 teaspoons dry mustard
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 2 center cut lamb loin chops with bone (1/2 inch thick)
Directions:
Prep Time: 10 min Total Time: 25 min Yield: 4
  1. Mix all marinade ingredients.
  2. Put pork and marinade in re-sealable plastic bag.
  3. Marinate pork chops a few hours or overnight.
  4. Fire up the grill or broiler or even heat in a pan on top of the stove. Baste during cooking.

Sweet Apple Pork & Potato

Ingredients:
  • 1 lb pork loin roast
  • ½ cup apple vodka or apple juice
  • 1/4 cup onion, chopped or flakes
  • 2 tsp garlic, chopped
  • 1 tablespoon sea salt
  • 2 apples, cored and quartered
  • 1 lb sweet potatoes
  • 1 cup chicken broth, with basil vodka
  • 2 tsps flour
  • ¼ cup mustard
  • pepper, to taste
  • Optional: 4 slices bacon, 2 large carrots
Directions:
Prep Time: ½ day Total Time: 1 day Yield: 2
  1. Marinate pork in re-sealable plastic bag with apple vodka/juice, onions, garlic, salt and pepper for 8-24 hrs.
  2. Core and quarter apples, slice sweet potatoes, layer on bottom of crock pot. If adding carrots, add in sliced carrots now.
  3. Place pork, with marinade on top of apples and sweet potato, then pour chicken stock over roast. If you are adding bacon, place strips over roast now.
  4. Cover and cook on low power for for 7 to 10 hours, or until sweet potatoes are tender and pork is cooked.
  5. Once cooked, transfer pork out of crock pot, pour out the marinade into a sauce pan, whisk in the flour and the mustard, continue stirring and bring to a simmer for about 5 minutes.
  6. Mash the sweet potatoes, adding butter as you would to normal mashed potatoes, then add half of the apples from the crockpot, mixing in with mashed potatoes. Sprinkle with a little brown sugar if not too sweet already.
  7. Serve mashed sweet potatoes (and carrots) on the side of the pork.

Quick and Easy Grilled Pork Chops

Ingredients:
1 (16 ounce) bottle Italian salad dressing
6 pork chops
1/2 cup melted butter

Directions:
Prep Time: 5 min  Total Time: 4 hrs 15 min  Yield: 6
1. Place the pork chops into a large ziploc bag or bowl with a lid (not a metal container).
2. Pour salad dressing in the bag or bowl.
3. Marinate at least 4 hours or overnight, turning the bag or shaking up the bowl 3 or 4 times.
4. Place the chops on a hot grill and cook until juices run clear.
5. Baste these with butter as they cook so they stay tender.

Approx. Calories 350 per serving

Apple Onion Pork Chops

Ingredients:
  • 4 pork chops, 1 inch thick 
  • 1 1/2 cups applesauce 
  • 1 tablespoon brown sugar 
  • 1 package dry onion soup mix 
  • salt and pepper
Directions:
Prep Time: 10 min  Total Time: 50 min  Yield: 4
1. Salt and pepper chops and quickly brown.
2. Mix the remaining ingredients.
3. Place chops in baking dish and top with applesauce mixture.
4. Bake 375 for 40 minutes.
or
1. Mix all ingredients in ziploc bag with pork chops.
2. Put in the crockpot and cook for 4-6 hrs.

Gourmet Tenderloin Pizza

Ingredients:
  • 1 pizza crust, use recipe Pizza Dough 
  • 2 cups asiago cheese, shredded 
  • 1/2 lb veal or 1/2 lb lamb, cooked, shredded 
  • 1 cup onion, caramalized 
  • 2 medium potatoes, baked, thinly sliced 
  • 2 garlic cloves, minced 
  • 1/2 cup walnuts, toasted and coarsely chopped (optional)
Directions:
Prep Time: 10 min  Total Time: 8  hrs Yield: 4 (2 slices each)
1. Preheat oven to 400°F Sprinkle 1 cup of cheese and garlic over pizza crust (preparation/cook time does not include making pizza crust).
2. Layer meat, onions, potatoes and walnuts over crust, then cover with remaining cheese (prep time doesn't include caramalizing onions or cooking meat and potatoes).
3. Place pizza in the oven and bake about 10 to 12 minutes. Let pizzas rest briefly before slicing.

Ham Primavera

Ingredients:
Directions:
Prep Time: 15 mins Total Time: 35 mins Yield: 4
1. Fry ham and onion flakes in oil or butter until tender.
2. Add in 3 cheese alfredo sauce and salt and pepper, stir until smooth.
3. Bring to a light boil; stir for about 2 minutes or until slightly thickened.
4. Stir in spaghetti, mushrooms, and peas; stir until heated through.
5. Top with Parmesan cheese.

Pepsi Pork Roast

Ingredients:
  • 2lbs pork loin roast
  • 1 (12 ounce) can Pepsi
  • 1 (10 3/4 ounce) can cream of mushroom soup
  • 0.5 (1 1/4 ounce) package onion soup mix
  • options: substitute with beef roast, cola with 3/4 cup sherry
Directions:
Prep Time: 5 mins Total Time: 4.5 hrs Yield: 6
  1. Place roast in crock pot.
  2. Mix soup mix with soup.
  3. Add cola to soup mixture and pour over roast.
  4. Cook on high for 4-5 hours.
  5. When done, remove roast and thicken juices with cornstarch for wonderful gravy.
