Homemade Biscuits

Ingredients:
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/4 cup cold salted butter
  • 1 cup skim milk
Directions:
Prep Time: 10 min Total Time: 30 min Yield: 12
  1. Combine flour, baking powder& salt.
  2. Cut thebutter into the flour using 2 knives or a pastry blender, keep cutting until the mixture looks like coarse crumbs.
  3. With a fork stir in the milk, very gently, until a soft dough forms. Don't over mix.
  4. Place the dough on a baking sheet (jelly roll pan) and with floured hands press it into a 9" x 9" square.
  5. Use a spatula or the dull side of a knife and cut the dough into 12 biscuits without actually cutting them apart.
  6. Bake in 400F oven for about 15-20 minutes or until they are golden.
  7. Transfer to a wire rack& cool for about 10 minutes.
Approx. 115 calories per serving

Hashbrown Breakfast Pie

Ingredients:
  • 2 cups frozen hash brown potatoes, thawed
  • 2 cups frozen broccoli florets, steamed
  • 1 can mushroom tops, drained
  • 1 cup cheese casserole blends
  • 4 eggs
  • 1/4 cup 1% milk
  • 1/2 tsp dried thyme
  • 1/2 tsp onion powder
  • 1/4 tsp pepper
Directions:
Prep Time: 10 min Total Time: 45 min Yield: 4
  1. Preheat oven to 375 degrees.
  2. Lightly press harsh brown potatoes into greased 9-inch pie plate to form crust.
  3. Sprinkle with ½ cup of the cheese, and top with mushrooms and broccoli.
  4. Beat eggs, milk, thyme, onion powder and pepper with whisk until well blended.
  5. Pour over crust and toppings, sprinkle with remaining cheese.
  6. Bake 35 min. or until center is set and top is golden brown.

Egg Bacon Rings

Ingredients:
  • 6 slices bacon
  • 6 eggs
  • salt & pepper
  • melted butter

Directions:
Prep Time: 10 min Total Time: 20 min Yield: 6
  1. Preheat oven to 325.
  2. Saute or broil lightly strips of bacon.
  3. Grease bottom of muffin tin with the butter.
  4. Line the sides with the bacon.
  5. Break 1 egg in each tin, or mix as omelettes and pour into each tin.
  6. Bake for 10 minutes or until eggs are set.
Approx. Calories 175 per serving

Sugar Free Granola

Ingredients:
  • 4 cups rolled oats
  • 1/2 cup sugar-free honey (or optionally, peanut butter, or half & half)
  • 1/2 cup butter (melted)
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon (optional)
  • 1 pinch salt
  • 2 cups dried fruit (no sugar added)
  • 1/2 cup of chopped nuts (optional)

Directions:
Prep Time: 10 min Total Time: 30 min Yield: 12
  1. Preheat oven to 325°F.
  2. In separate bowl mix together melted butter, sugar free honey, vanilla, cinnamon and salt.
  3. Pour honey mixture over dry ingredients and mix thoroughly. (if you’re going to add nuts, add them at this time).
  4. Spread mixture evenly onto a large cookie sheet that has shallow sides. (make sure the mix is spread evenly and goes to the sides all the way around.
  5. Bake for 15 minutes in oven. You want to bake the mixture till it gets golden brown all over. The sides will start to darken before the middle.
  6. After 15 minutes take out of oven and stir well, put back in oven and watch carefully as it will darken fast. Total time depending on oven is generally about 20-25 minutes.
  7. Take out of oven when the granola is golden brown. The mixture will appear wet and you will think it's not done, but as the granola cools it gets crunchy.
  8. While the mixture is cooling on the baking sheet, I add the 2 cups of dried fruit and mix it well. The heat will help the fruit release some of its natural flavors without drying it out. I have tried baking the granola with the fruit and found cranberries especially get a little too hard.
  9. If you want granola in bars, cut while still warm but not hot to the touch.
  10. After about an hour the granola will be crunchy and ready to eat.
  11. Optionally: And typical granola bar topping can be added, like chocolate chips, etc., just won’t be sugar free.

Raspberry Chocolate Muffins

Ingredients:
  • 3 cups flour (I split half and half of white flour and whole wheat flour)
  • 1 1/2 cups sugar (I split 2/3 granulated white sugar and 1/3 brown sugar)
  • 1/2 cup cocoa
  • 4 tsps baking powder
  • 2 tsps baking soda
  • 1 1/3 cups raspberry yogurt
  • 1 1/3 cups low-fat milk
  • 1 tsp vanilla extract
  • 1 1/2 cups chocolate chips

Directions:
Prep Time: 5 min  Total Time: 20 min   Yield: 24 muffins
  1. Preheat oven to 400 C.
  2. Mix all dry ingredients.
  3. Mix in yogurt, milk, and vanilla, mix until smooth.
  4. Add in chocolate chips.
  5. Spray baking pan with oil and divide mixture evenly between 24 cups.
  6. Sprinkle a few chocolate chips on top of each muffin.
  7. Bake for 10-12 minutes, or until toothpick comes out clean.
Approx. 185 calories per muffin

Hashbrown Casserole

Ingredients:
  • 1 (16 ounce) package frozen hash brown potatoes
  • 1 (10 3/4 ounce) can cream of chicken soup
  • 1/2 cup melted butter
  • 1/4 cup dried onions
  • 1/2 cup milk
  • 1 cup cheddar cheese, shredded
  • 1 dash black pepper
  • 1 cup corn flakes, crushed and divided
Directions:
Prep Time: 5 min Total Time: 6 hrs Yield: 4
  1. Stir together butter, onions, hash browns, soup, milk, cheese, pepper, and 1/2 cups cornflakes.
  2. Pour into a greased 9x13 inch pan. Bake uncovered at 350 degrees for 1 to 1-1/2 hours or until golden brown and bubbly.
  3. Top with remaining corn flakes. Bake for another 10 minutes.
  4. Optional: Use thinly shredded hashbrowns and pour mixture into muffin tins (very thouroughly greased) and bake until edges are crisp and brown.

Breakfast Pizza

Ingredients:
Directions:
Prep Time: 10 min  Total Time: 25 min Yield: 4
  1. Cook bacon in skillet over medium heat until wavy but not crisp, about 3-4 minutes. Drain on paper towel.
  2. Sprinkle cheese and parsley over pizza crust (preparation/cook time does not include making pizza crust).
  3. Arrange bacon slices to divide crust into 4 pieces, one piece of bacon per slice. Then break egg beside each bacon strip so each quarter has one. Sprinkle with pepper.
  4. Bake for another 15 minute or until eggs are done as you like. Let stand about 2 minute before cutting.
