Ranch Potato Casserole

Ingredients:
  • 5 large potatoes, skin on, quartered
  • 1 cup ranch dressing
  • ½ cup sour cream
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheese
  • Salt & pepper to taste

 
Directions:
Prep Time: 10 min Total Time: 45 min Yield: 5-6
  1. Preheat oven to 350 degrees. While preheating, boil potatoes for about 10 minutes. Rinse and dry.
  2. In a bowl mix remaining ingredients then add boiled potatoes until well coated
  3. Place in casserole dish, sprinkling a bit more cheese on top and bake for 20 min.

Smoked Gouda Tilapia Rolls

Ingredients:
  • 4 large slices prosciutto
  • 4 fillets of tilapia
  • 1 1/2 tbsp Dijon mustard
  • 1 tbsp chopped chives
  • 4 sticks smoked gouda, 1 oz each
  • 12 spears asparagus, plunged into boiling water for 3 min.
  • 1 tbsp butter
  • 2 tsp flour
  • 1 cup chicken stock
  • 1/2 cup lemon vodka
  • Salt & freshly ground pepper, to taste
Directions:
Prep Time: 8 min Total Time: 20 min Yield: 4
  1. Lay prosciutto on a work surface and place fish fillets on top.
  2. Spread with mustard, sprinkle with chives and seasoning.
  3. Roll up 1 stick of cheese and 3 asparagus spears in each ham/fish layer, and secured with toothpicks.
  4. Melt butter in a skillet and sauté rolls until golden and set aside.
  5. Add flour to skillet and cook 1 minute, then whisk in chicken stock, vodka and bring to boil, then simmer 2-3 minutes.
  6. Add fish rolls to skillet, cover and continue cooking 5-7 minutes.
  7. Add any further seasoning and serve.

Sundried Tomato & Bacon Risotto

Ingredients:
  • 2 cups chicken broth
  • 1 cup water
  • 4 slices bacon, cooked & crumbled
  • 2 cups sliced mushrooms
  • 1 cup short grain brown or grain rice, uncooked
  • 1/4 cup sundried tomato & oregano dressing
  • 1/2 cup parmesan grated cheese
  • 2 tbsp fresh parsley, chopped
Directions:
  1. Prep Time: 10 min Total Time: 35 min Yield: 4
  2. Heat broth and water, set aside.
  3. Cook bacon in large skillet on medium-high heat for 5 min. or until crisp, drain and discard drippings
  4. Add mushrooms to bacon in skillet and cook 3 min, stirring occasionally.
  5. Add rice and dressing, stir 1 min.
  6. Add half of the broth mixture and cook 5 min. or until most of the liquid is absorbed, stirring occasionally.
  7. Add remaining broth mixture, cook 10 min. or until rice is tender and almost all of the liquid is absorbed, stirring occasionally.
  8. Sprinkle with cheese and parsley.

Egg Bacon Rings

Ingredients:
  • 6 slices bacon
  • 6 eggs
  • salt & pepper
  • melted butter

Directions:
Prep Time: 10 min Total Time: 20 min Yield: 6
  1. Preheat oven to 325.
  2. Saute or broil lightly strips of bacon.
  3. Grease bottom of muffin tin with the butter.
  4. Line the sides with the bacon.
  5. Break 1 egg in each tin, or mix as omelettes and pour into each tin.
  6. Bake for 10 minutes or until eggs are set.
Approx. Calories 175 per serving

Turkey, Bacon Pasta Salad With Lemon Basil Dressing

Ingredients:
Lemon Basil Dressing
  • 3/4 cup mayonnaise
  • 2 tablespoons basil leaves, fresh, chopped or 1 teaspoon dried basil
  • 1 teaspoon lemon, rind of, grated
  • 1 teaspoon lemon juice

 
Salad
  • 7 ounces pasta shells, small
  • 6 slices bacon, cooked crisp, crumbled
  • 1 1/2 cups turkey, smoked cut into strips
  • 1 1/2 cups lettuce, shredded
  • 1 cup cheese, shredded, your favorite kind
  • 1 large tomato, chopped

 
Directions:
Prep Time: 5 min Total Time: 2 hrs 30 min Yield: 6
  1. Cook pasta as directed on package; Rinse pasta in cold water; drain.
  2. Mix together mayonnaise, basil, lemon peel and lemon juice in a large bowl to form dressing.
  3. Add pasta, bacon, turkey, lettuce, cheese and tomato to dressing. Mix well.
  4. Cover and refrigerate 1-2 hours to blend flavors.

Meat-Lovers Pizza Salad

Ingredients:
  • 3 cups dry spiral pasta
  • 1 large tomato, diced
  • 3 slices salami (deli shaved), diced
  • 3 slices summer sausage (deli shaved), diced
  • 3 slices ham (deli shaved), diced
  • 2 strips fried bacon, crumbled
  • 2 cups pizza mix shredded cheese
  • 2/3 cups tomato oregano dressing
Directions:
Prep Time: 15 min Total Time: 25 min Yield: 10 servings
  1. Boil pasta until al dente.
  2. Bake or fry bacon slices while pasta is boiling.
  3. Meanwhile, dice the meat and tomatoes.
  4. Once noodles and bacon have cooled, add to large salad bowl with diced meat and tomatoes, toss.
  5. Add cheese and dressing and thuroughly mix.
Easy to make for whatever your fav pizza toppings are...BBQ chicken, chicken bacon ranch, hawaiian, deluxe, etc.

The Italian Job

Ingredients:
  • 500 g pkg Italian sausage
  • 2 tsps garlic, chopped
  • 8 oz can stewed tomatoes
  • 1 roasted red pepper (packed in oil), chopped
  • 1/2 green pepper, chopped
  • 1/4 onion, finely chopped
  • 1/4 cup spinach
  • 1 cup fresh mushrooms, sliced
  • 1 tbsp oil
  • 1 cup tomato sauce, herb flavoured
  • 2 slices bacon
Directions:
Prep Time: 5 min  Total Time: 30 min   Yield: 2
  1. Coat frying pan with half the oil and place entire package of sausage in frying pan, do not chop up until browned on both sides for 2 minutes each side, then chop to bite size pieces.
  2. While frying sausage, bake bacon strips for about 5 minutes, so not very crisp, set aside.
  3. Add to frying pan all the veggies, garlic and remaining oil and mix in with meat, simmer on low-medium heat for about 10 minutes.
  4. Add tomato sauce and bacon, cut into pieces, stir in mixing well and simmer on low for another 10 minutes.
  5. Serve over pasta of your choice, sprinkle with cheese of your choice.
  6. Another option, stuff into extra large shell pastas.
  7. Add ground turkey to lighten up in calories.

Approx. 350 calories

Broccoli Salad

Ingredients:
2 bunches raw broccoli
1 medium onion
1 cup raisins
1 cup sunflower seed
1/2 lb crisp, crumbled bacon
1 cup Miracle Whip
1/3 cup sugar
3 tablespoons vinegar

Directions:
Prep Time: 15 min  Total Time: 15 min  Yield: 6
  1. Chop broccoli and onion fine.
  2. Add the rest of the ingredients in order. Mix well.
  3. Chill for several hours before serving.
Approx. Calories 500 per serving

Potatoes 'N Peas

Ingredients:
  • 1 tablespoon olive oil 
  • 2 cups red potatoes, diced 
  • 2 cups frozen peas 
  • salt and pepper 
  • Option - 2 slices diced bacon
Directions:
Prep Time: 10 min  Total Time: 30 min  Yield: 4
  1. In a large skillet, combine olive oil and potato (add bacon if using that option).
  2. Cook over medium heat until potatoes and bacon begin to brown.
  3. Cover and continue to cook 5 minutes or until potatoes are tender.
  4. Stir in peas.
  5. Cover and cook an additional 5 minutes.
  6. Season with salt and pepper.

Approx. Calories 200 per serving

Perfect Potato Salad

Ingredients:
2 lbs small red potatoes
4 hard-boiled eggs, diced
1/2 cup dill pickles, shredded
1 cup mayonnaise
1/3 cup mustard
½ pkg bacon, cooked and crumbled
1 teaspoon salt
1 teaspoon pepper
2 teaspoons dill

Directions:
Prep Time: 30 min  Total Time: 45 min  Yield: 6
1. Do not peel potatoes, cut into bite size pieces and bake or boil (personally I prefer baked) them until they are tender.
2. Boil eggs while potatoes are cooking. Let them both cool after cooking.
3. Add shredded pickles to eggs and potatoes in a large bowl.
4. Mix mayo, mustard, dill, salt and pepper. Add about 2/3 of dressing to salad. Mix well; if it needs more dressing, add the rest. Sometimes it doesn't need any more.
5. Add crumbled bacon last, mixing most of it into the salad and leaving enough for a layer on top of the salad.

Breakfast Pizza

Ingredients:
Directions:
Prep Time: 10 min  Total Time: 25 min Yield: 4
  1. Cook bacon in skillet over medium heat until wavy but not crisp, about 3-4 minutes. Drain on paper towel.
  2. Sprinkle cheese and parsley over pizza crust (preparation/cook time does not include making pizza crust).
  3. Arrange bacon slices to divide crust into 4 pieces, one piece of bacon per slice. Then break egg beside each bacon strip so each quarter has one. Sprinkle with pepper.
  4. Bake for another 15 minute or until eggs are done as you like. Let stand about 2 minute before cutting.
Approx. Calories 500 per serving

Maple Pumpkin Cheesecake Tarts

Ingredients:
Directions:Prep Time: 20 min Total Time: 1.5-3.25 hrs Yield: 36 tarts or 8 slices
1. Bake crusts as per instructions on package.
2. With mixer, beat cream cheese until fluffy.
3. Add pumpkin, sugar, and spices.
4. Gently mix in whipped cream and maple syrup.
5. For tarts - Spoon into crusts. Refrigerate three hours or until set. Garnish as desired.
For cheesecake - Bake at 325º for 1 1/4 hours or until center appears nearly set when shaken.
6. For the adventurous: sprinkle bacon over crust before spooning in mixture. After filling is in crust, sprinkle more bacon on top.
Store leftovers in refrigerator.

Bacon Wrapped Stuffed Shrimp

Ingredients:
Directions:
Prep Time: 30 mins Total Time: 40 mins Yield: 5
1. Preheat oven to broil while blending the spices in a small bowl, then set this aside.
2. Cook the bacon in a frying pan over medium/high heat, but don't cook it all the way to crispy or brown. About 3 minutes per side, then drain on paper towels.
3. Cut down into the back of the shrimp, without cutting all the way through, so that the shrimp is nearly butterflied open. (This will make a pocket for the cheese & pepper).
4. Place the shrimp onto paper towels to drain off excess water (if from frozen).
5. Place one slice of the pepper into the slit on the back of a shrimp.
6. Cut an inch-long chunk of cheese (about 1/4 inch thick), and place it on the pepper slice.
7. Wrap a piece of bacon around the shrimp, starting where the cheese is, start wrapping the thinnest end of the bacon and once wrapped slide a skewer through the shrimp, starting with the end where the cheese is and piercing through.
8. Repeat with the remaining shrimp and slide them onto the skewer with the tails facing the same direction.
9. Put the skewer onto a baking sheet or broiler pan and sprinkle a very light coating of the seasoning blend over the shrimp, then broil for 3 to 4 minutes or until the bacon begins to brown and the cheese begins to ooze.
10. Serve over a bed of rice if desired as a meal or dip in ranch sauce for an appetizer.

Aussie Chicken

Ingredients:
Directions:
Prep Time: 20 mins Total Time: 35 mins Yield: 4-6
  1. Preheat oven to 350 and rub the chicken breasts with seasoning salt.
  2. In a medium-large skillet cook bacon until crisp. Set bacon aside.
  3. Drain the majority of the bacon grease and cook the chicken breasts in the same skillet. Cook on both sides until lightly browned.
  4. Meanwhile, in a small bowl combine mustard, honey/light corn syrup, and dried onion flakes, mix well.
  5. When chicken breasts are browned, place them in a 9x13 baking dish, spread the mustard mixture on the breasts.
  6. Layer the chicken breasts with bacon, mushrooms and cheese.
  7. Bake in oven for 15 minutes, or when the cheese is melted and chicken juices run clear.

Tuna & Bacon Pasta Fina

Ingredients:
Directions:
Prep Time: 5  Total Time: 15  Yield:4-6
  1. Fry the bacon in a pan. When bacon is done, drain on papertowels.
  2. Keep the bacon grease in the pan. (Note: You can reduce the amount of bacon grease you use if you so choose, just keep enough so it doesn't get dry).
  3. Put the tuna and garlic in the pan with the bacon grease and heat over medium heat - stirring occasionally. Do this for approximately 5 minutes.
  4. Crumble the bacon strips and place back in the pan with the tuna & garlic.
  5. Heat for another minute or two while boiling your angel hair pasta.
  6. When pasta is done put into a large bowl and transfer your bacon & tuna mixture from the pan into the bowl of pasta.
  7. Sprinkle with parmesan cheese and black pepper (optional), toss all ingredients to incorporate all the flavors. Add a side of mushrooms.
