Turkey, Bacon Pasta Salad With Lemon Basil Dressing

Ingredients:
Lemon Basil Dressing
  • 3/4 cup mayonnaise
  • 2 tablespoons basil leaves, fresh, chopped or 1 teaspoon dried basil
  • 1 teaspoon lemon, rind of, grated
  • 1 teaspoon lemon juice

 
Salad
  • 7 ounces pasta shells, small
  • 6 slices bacon, cooked crisp, crumbled
  • 1 1/2 cups turkey, smoked cut into strips
  • 1 1/2 cups lettuce, shredded
  • 1 cup cheese, shredded, your favorite kind
  • 1 large tomato, chopped

 
Directions:
Prep Time: 5 min Total Time: 2 hrs 30 min Yield: 6
  1. Cook pasta as directed on package; Rinse pasta in cold water; drain.
  2. Mix together mayonnaise, basil, lemon peel and lemon juice in a large bowl to form dressing.
  3. Add pasta, bacon, turkey, lettuce, cheese and tomato to dressing. Mix well.
  4. Cover and refrigerate 1-2 hours to blend flavors.

Tuna Cakes

Ingredients:

Directions:
Prep Time: 15 mins Total Time: 23 mins Yield: 4
1. Mix all ingredients. If runny add more panko. Can add shredded cheese at this point or add it on top later to make a Melt.
2. Form into patties.
3. Stir some of the margarine in frying pan, fry patties for approximately 4 minutes each side.
4. Make into a melt by adding to bread and swiss cheese. Add curry to the tuna and add pear or apple slices to the melt.

Lemon Pepper Tuna Quinoa Stir-Fry

Ingredients:
Directions:
Prep Time: 0 mins Total Time: 20 mins Yield: 2
1. Bring water and quinoa to boil, then simmer until water is gone, about 10 minutes.
2. Saute tuna in margarine and lemon juice on low in seperate frying pan.
3. Move tuna to side of pan, scramble eggs in other side.
4. Once quinoa is cooked, add to frying pan with spinach, lemon pepper and salt and pepper, mix all ingredients thoroughly.
5. Heat through on low for about 5 minutes, adding sliced mushrooms in the last few minutes.

Tuna & Bacon Pasta Fina

Ingredients:
Directions:
Prep Time: 5  Total Time: 15  Yield:4-6
  1. Fry the bacon in a pan. When bacon is done, drain on papertowels.
  2. Keep the bacon grease in the pan. (Note: You can reduce the amount of bacon grease you use if you so choose, just keep enough so it doesn't get dry).
  3. Put the tuna and garlic in the pan with the bacon grease and heat over medium heat - stirring occasionally. Do this for approximately 5 minutes.
  4. Crumble the bacon strips and place back in the pan with the tuna & garlic.
  5. Heat for another minute or two while boiling your angel hair pasta.
  6. When pasta is done put into a large bowl and transfer your bacon & tuna mixture from the pan into the bowl of pasta.
  7. Sprinkle with parmesan cheese and black pepper (optional), toss all ingredients to incorporate all the flavors. Add a side of mushrooms.
